We have worked in the meat industry for 26 years, early on in my career I found the same basic sharpening gear that had been used in the industry the past 100 years, with little instruction on the how's and why's of sharpening. It has been my goal to research and source the latest and best gear and techniques in order for the new or old hand to have the sharpest gear possible.
